Air Fryer Pizza Stuffed Peppers: Easy, Cheesy, and Kid Approved

air fryer pizza stuffed bell peppers

If your household loves pizza night but you’re wanting something a little lighter and maybe a bit more veggie-forward, you need to try my recipe for air fryer pizza stuffed bell peppers. It takes the best parts of pizza like melty cheese, Italian spices, and pepperoni, and swaps out traditional pizza dough with nutrient-dense bell peppers for a fun and filling meal. It’s fast enough for busy weeknights, easy enough for beginners, and flavorful enough that nobody will even miss the crust.

A Healthy Twist on Pizza that’s Kid-Friendly

I’ve found that when you’re trying to please picky eaters, anything with the word “pizza” is usually a safe bet. This recipe is especially great for kids for a few key reasons:

  • 1. Familiar flavors in a fun format
Kids thrive on routine and familiarity, so turning their favorite pizza ingredients into something new but recognizable helps broaden their palate without too much pushback. The sausage, tomato sauce, pepperoni, and melty cheese feel like home—even if the “crust” is a bell pepper.

    2. Customizable and interactive
Let your kids build their own pepper “pizzas” by letting them choose which color pepper they want and help layer on the toppings. Making dinner interactive often encourages kids to try new foods and gives them a sense of ownership at the table.

    3. Sweet bell peppers are mild and naturally appealing
Red, orange, and yellow bell peppers are sweeter and less bitter than green ones, making them more approachable for little ones. Once they’re softened in the air fryer and topped with cheese, they lose any hint of crunch and become more like a soft shell, perfect for kids who might be texture-sensitive.

    4. A less messy alternative to pizza
Stuffed peppers are easy to portion out and don’t leave behind greasy fingers or sauce-stained shirts—win-win for parents and kids alike.

What Makes This a Healthy Recipe?

Pizza may not be the first thing that comes to mind when you think “healthy dinner,” but this recipe gives it a total makeover while still keeping all the flavor. Here’s how it stacks up nutritionally:

  1. Bell peppers instead of crust
Swapping out traditional pizza dough for bell peppers cuts way down on refined carbohydrates and empty calories, while adding fiber, vitamin C, and antioxidants. Each pepper half acts like a mini vessel for your pizza toppings (how fun is that?!)

  2. Protein-rich filling
Using a full pound of Italian sausage and lean turkey pepperoni means this dish is packed with high-quality protein to help keep you full and satisfied. Protein is essential not just for muscle repair but also for supporting blood sugar balance and keeping you full.

  3. Controlled portions of cheese
Cheese is one of those things that’s easy to go overboard on, but this recipe keeps it balanced. There’s enough mozzarella to give you that gooey, pizza-style melt without overwhelming the dish. By saving half of the cheese to add fresh right before cooking, you get the best texture and flavor right when it counts.

  4. Tomato sauce + Italian seasoning = flavor without sugar
Using tomato sauce instead of a sweetened pizza sauce helps control added sugars. Plus, Italian seasoning brings in bold flavor with anti-inflammatory herbs like oregano, basil, and thyme—no need for extra salt or sugar.

  5. Naturally gluten-free and low-carb
Because there’s no bread or flour involved, this recipe fits perfectly into gluten-free, low-carb, or keto-adjacent eating patterns. It’s a great option for anyone trying to cut back on processed grains without sacrificing comfort food.

How Do I Freeze Stuffed Bell Peppers?

Absolutely! Freezing bell peppers is a great way to meal prep in advance and cut down on time during busy weeknights. Here’s how to prep everything so your pizza stuffed peppers are ready to go:

  1. Prepare a freezer bag label.
Write the recipe name, basic cooking instructions, and a use-by date on your freezer bag or container. I recommend using the peppers within 90 days of the prep date for the best flavor and texture.

  2. Mix the filling ingredients.
In a medium bowl, combine minced garlic, chopped onion, shredded mozzarella cheese, cooked sausage, turkey pepperoni, tomato sauce, Italian seasoning, and the chopped tops of the bell peppers. Add the mixture to your freezer bag and gently mix to combine.

  3. Wrap and flash freeze the peppers.
Wrap each bell pepper half in plastic wrap to protect them from freezer burn. Place the wrapped peppers a few inches apart on a baking sheet and freeze for 40–50 minutes, or until they’re firm enough to hold their shape.

  4. Store in your freezer bag or container.
Once the peppers are solid, transfer them to your labeled freezer bag or airtight container. Remove as much air as possible before sealing, then return them to the freezer.

How do I Cook Pizza Stuffed Bell Peppers in the Air Fryer?

Once your stuffed peppers are frozen and ready to go, cooking them in the air fryer is quick and easy!

  1. Thaw overnight in the fridge.
For best results, transfer the frozen stuffed peppers to the refrigerator and let them thaw overnight.

  2. Preheat your air fryer.
Set your air fryer to 350°F and let it preheat for 5 minutes to ensure even cooking.

  3. Cook the peppers.
Place the thawed peppers in the air fryer basket. Cook at 350°F for 15 minutes.

  4. Add cheese and finish cooking.
Top each pepper with the reserved shredded mozzarella cheese, then cook for an additional 3 minutes at 350°F, or until the cheese is fully melted and bubbly.

  5. Repeat if needed.
If you’re cooking in batches, repeat the process with the remaining peppers.

I am going to try these laid in bottom of crockpot and cook maybe 6 hours then top with cheese to melt

The photo of the recipe does not show the peppers cut as in recipe instructions? it shows whole peppers with just the tops cut off?
