easy instant pot lasagna

Who doesn’t love a big, cheesy slice of lasagna? It’s the ultimate comfort food—warm, hearty, and packed with layers of saucy, cheesy goodness. But let’s be real: traditional lasagna takes forever to make. Between cooking the meat, boiling the noodles, layering everything just right, and baking it for what feels like an eternity, who has that kind of time on a busy weeknight?

That’s where the Instant Pot comes in to save the day! With this recipe for Easy Instant Pot Lasagna, you can get all the amazing flavors of classic lasagna without the long wait. Plus, it’s freezer-friendly, meaning you can prep it ahead of time and have a homemade meal that’s ready to go.

So, let’s break it down—how do you make lasagna in the Instant Pot, and why is it such a game-changer?

  • 93% lean ground beef
  • Yellow onion
  • Marinara sauce
  • Italian seasoning
  • Salt
  • Black pepper
  • Onion powder
  • Garlic powder
  • Sugar
  • Mafalda pasta (may substitute rotini)
  • Water
  • Part-skim ricotta cheese
  • Shredded mozzarella cheese

How to Meal Prep Instant Pot Lasagna

  1. Prepare a label, including name, instructions, and use-by date (I recommend 90 days after prep date).
  2. Add all ingredients to a freezer bag, except the pasta, water, ricotta, and mozzarella.
  3. Remove air, seal, attach the label, and freeze until ready to cook.

Why Don’t I Freeze Cheese and Pasta?

While your meal-prepping your lasagna, you might be wondering why the cheese and pasta aren’t included in the pre-frozen portion. Here’s why:

  • Cheese Changes Texture: Freezing ricotta can make it grainy and watery when thawed. Mozzarella also loses its smooth, melty texture. It’s better to add it fresh for that creamy, gooey goodness.
  • Pasta can Get Mushy: If you freeze uncooked pasta with the sauce, it can absorb too much liquid and end up overcooked or gummy when pressure-cooked. Adding dry noodles at the time of cooking keeps them perfectly al dente.

So, the best approach? Freeze the meat sauce and add fresh cheese and pasta when you’re ready to cook! That way, you get the best flavor and texture every time. For more dos and don’t about freezing food, our post “Are Freezer Meals Mushy? Tips for Texture” is a great resource.

Benefits of Cooking Lasagna in the Instant Pot

Utilizing the Instant Pot for lasagna offers several advantages:

  • Time Efficiency: Traditional lasagna recipes often require extensive preparation and baking times. The Instant Pot streamlines this process, reducing the overall cooking duration significantly, making it a great weeknight dinner option.
  • One-Pot Convenience: The beauty of the Instant Pot lies in its multi-functionality. From sautéing the meat to cooking the noodles and melting the cheese, all steps occur within a single appliance, minimizing cleanup and simplifying the cooking process.
  • Consistent Results: Pressure cooking ensures even heat distribution, resulting in uniformly cooked noodles and a harmonious blend of flavors throughout the dish.
  • Better Flavor: The sealed environment of the Instant Pot allows flavors to meld more intensely, resulting in a richer and more robust tasting lasagna.
  • Freezer-Friendly Preparation: Preparing lasagna in the Instant Pot lends itself well to batch cooking and freezing. Portions can be made ahead of time and frozen for future meals.

Homemade vs Store-Bought Frozen Lasagna

Making homemade Instant Pot lasagna is not only quicker and tastier, but it’s also a healthier alternative to grabbing a frozen lasagna from the grocery store. Here’s why:

  • Fewer Preservatives & Additives: Store-bought frozen lasagnas are packed with preservatives to keep them shelf-stable for months (sometimes years!). When you make your own, you can choose ingredients that don’t use mystery chemicals and artificial flavors.
  • Lower Sodium: Ever checked the nutrition label on a frozen lasagna? Many brands contain over 1,000mg of sodium per serving! Making it yourself allows you to control the salt and use healthier, low-sodium ingredients.
  • No Hidden Sugars: Some frozen lasagnas sneak a lot of added sugar into their sauce to enhance flavor. When you make it at home, you control the ingredients and the amount of sugar that’s added.
