One-Pot Wonder: Keto Balsamic Chicken Crockpot Recipe

One of my favorite things about this recipe is how versatile it is. You can easily customize it to your liking by adding in your favorite vegetables or serving it over cauliflower rice or zucchini noodles. Plus, the leftovers make for a great lunch the next day!

Here are some great ways to use your leftovers:

1. Chicken Salad: Chop up the leftover chicken and add it to a bed of greens. Top with your favorite salad toppings, such as cherry tomatoes, cucumbers, and avocado. Drizzle with a balsamic vinaigrette for an easy and delicious lunch.

2. Wrap: Take a large tortilla and fill it with the leftover chicken, lettuce, and other veggies of your choice. Roll it up and enjoy a flavorful and filling wrap.

3. Pizza: Use leftover chicken as a topping for a homemade pizza. Spread some tomato sauce on a pizza crust, add the chicken, and top with mozzarella cheese. Bake in the oven until the cheese is melted and bubbly.

Instructions

1) Label your 1 gallon-sized plastic freezer bag. Make sure to include name, instructions, and a use-by date (I recommend 90 days after prep date).

2) Add all ingredients to your freezer bag. Stir gently to combine.

3) Remove air, seal, and freeze.

 

Crockpot Instructions:

-Thaw the freezer meal overnight in the fridge.

-Transfer contents into Crockpot.

-From thawed, cook for 6-8 hours on low or 3-4 hours on high. 

-When done cooking, shred or slice chicken (if whole) then mix with the sauce.

 

Instant Pot Instructions:

-From frozen, sauté in Instant Pot for 5 minutes then flip the meal over. Pressure cook for 25 minutes on high. Allow 10 minutes for natural release.

-From thawed, pressure cook for 20 minutes on high. Allow 10 minutes for natural release.

-When done cooking, shred or slice chicken (if whole) then mix with the sauce.

 

TIP:  Serve warm over cauliflower rice, zucchini noodles, or your favorite low-carb bread. Top with chopped parsley and add some veggies on the side. So yummy!

We have tested this recipe for a serving size of 6. If you are cooking for less than 6 people, decrease the amount of liquid and the cook time. If you are cooking for more than 6 people, increase the amount of liquid and the cook time. Do this and your meals will NEVER turn out dry or mushy. Happy Cooking!
