Today I want to share one of my go-to Freezer Fit meal recipes: Light Country Lemon Chicken. This dish is not only delicious, but it’s also healthy and easy to make ahead of time.
First, let’s talk about why this recipe is so good. The combination of lemon, garlic, and herbs gives the chicken a bright and flavorful taste that will leave you wanting more. But it’s also a hearty meal that will satisfy even the hungriest of bellies.
This recipe is made with boneless skinless chicken breasts, which are a lean source of protein. It’s also low in fat and carbs, making it an excellent option for those following a keto or low-carb diet. Additionally, it’s gluten-free and dairy-free (depending on the ingredients in your broth and Italian dressing), making it a great choice for those with dietary restrictions.
One of the things I love about this recipe is how easy it is to make ahead and freeze. Add all the ingredients to a gallon-sized plastic freezer bag, stir to combine, and freeze. When you’re ready to cook it, thaw it overnight in the fridge and transfer it to a Crockpot or Instant Pot. It’s perfect for those busy weeknights when you don’t have time to cook.
Speaking of cooking, let’s talk about how to cook this dish. If you’re using a crockpot, transfer the thawed contents to the crockpot and cook on low for 4-6 hours or high for 3-4 hours or until the chicken is cooked through. If you’re using an Instant Pot, you can either cook it from frozen (sauté for 5 minutes, then pressure cook on high for 20 minutes) or from thawed (pressure cook on high for 15 minutes).
You can play up this country treat with low-fat buttermilk biscuits, steaming corn on the cob, and crunchy snap peas (low carb). Serve over rice, pasta, or zucchini noodles (low-carb friendly).
So, what is this recipe good for? Well, it’s great for those busy nights when you don’t have time to cook. It’s also great for meal prep, as you can make a big batch and freeze it for later. And because it’s low in carbs and high in protein, it’s an excellent option for those looking to lose weight or maintain a healthy lifestyle.
