- 1.9998 lb boneless skinless chicken breasts
- 1.0002 bag (16 oz per bag) frozen peach slices
- 1.0002 red onion sliced
- 1.9998 tbsp light brown sugar
- 1.9998 tbsp soy sauce low sodium (use tamari for gluten-free)
- 3.0006 tsp ground ginger
- 1.0002 tbsp honey
- 1.0002 tsp black pepper
- 0.2502 cup water (added on day of cooking) or chicken broth
1) Label your 1 gallon-sized plastic freezer bag. Make sure to include name, instructions, and a use-by date (I recommend 90 days after prep date).
2) Add all ingredients to your freezer bag. Stir gently to combine.
3) Remove air, seal and freeze.
Crockpot Instructions
-Thaw freezer meal overnight in fridge.
-Transfer contents into Crockpot.
-Add 1/4-1/2 cup of water or chicken broth (add more if needed).
-From thawed, cook on low for 6-8 hours or on high 3-4 hours or until chicken is cooked through.
-Shred or slice chicken and mix with the sauce.
Instant Pot Instructions
-From frozen, sauté in Instant Pot 5 minutes then flip meal over. Add 1/4-1/2 cup of water or chicken broth. Pressure cook on high for 20 minutes, then natural release for 10 minutes.
-From thawed, add 1/4-1/2 cup of water or chicken broth. Pressure cook on high for 15 minutes, then natural release for 10 minutes.
-Slice or shred chicken and mix with sauce.
TIP: Serve with fragrant jasmine rice and sprinkle salted chopped cashews and chives on top! No finer side than fresh pineapple spears and peach slices sprinkled with toasted coconut!
We have tested this recipe for a serving size of 6. If you are cooking for less than 6 people, decrease the amount of liquid and the cook time. If you are cooking for more than 6 people, increase the amount of liquid and the cook time. Do this and your meals will NEVER turn out dry or mushy. Happy Cooking!
