Why Pesto Sheet Pan Chicken is a Great Freezer Meal

Life can get hectic, and sometimes preparing a healthy meal at the end of a long day feels impossible. That’s where freezer meals come in handy, and pesto sheet pan chicken is the perfect candidate.

  1. Prep Ahead of Time: This recipe can be prepped in advance and frozen for future meals. Simply combine all of your ingredients except for the mozzarella cheese in a freezer-safe bag or container.

  2. Minimal Effort for Big Flavor: Once your freezer meal is prepared, cooking day is almost as easy as it gets. There’s no need to chop or marinate ingredients last-minute; the hardest part is waiting for the chicken to cook! Just preheat your oven, lay everything out on the sheet pan, and roast to perfection. The mozzarella cheese is added at the end, giving it that melty, golden topping everyone loves.

  3. Lasts for Months: Freezing this dish extends its shelf life, making it ideal for busy weeks. It can stay in the freezer for up to 3 months, giving you flexibility in meal planning. Having a few ready-to-go meals on hand makes last-minute dinners easy, especially for those days when you’re short on time.

  4. One-Pan Wonder: The best part of this recipe, aside from the freezer-friendly benefits, is that it’s a one-pan meal. No extra dishes to clean! Simply throw all the ingredients on the sheet pan, and you’re good to go.

  5. Quick and Easy: This meal takes less than 20 minutes to cook, making it the perfect option for busy weeknights.

What Makes This Meal a Healthy Recipe

In addition to being a fantastic freezer meal, pesto sheet pan chicken is packed with nutritious ingredients, making it a health-conscious choice for dinner.

  1. Lean Protein from Chicken: Chicken breasts are a great source of lean protein, which is essential for building and repairing tissues, as well as maintaining muscle mass. For more chicken recipes check out our post 22 Chicken Freezer Meals – The Best Recipes Online.

  2. Fiber-Rich Green Beans: Green beans are an excellent source of dietary fiber, which aids in digestion and helps keep you feeling full longer. They also provide essential vitamins and minerals, such as Vitamin C, Vitamin K, and folate.

  3. Antioxidants from Cherry Tomatoes: Tomatoes, especially when fresh, are rich in antioxidants like lycopene. Lycopene can reduce the risk of chronic diseases, including heart disease. Cherry tomatoes also contribute a dose of vitamin C, an essential nutrient for immune health.

  4. Healthy Fats from Olive Oil: Extra virgin olive oil contains heart-healthy monounsaturated fats, which help reduce bad cholesterol levels, lower the risk of heart disease, and support brain health.

  5. The Power of Pesto: Pesto, made from basil, garlic, nuts (usually pine nuts), and olive oil, is not only delicious but offers many health benefits. Basil contains anti-inflammatory compounds, and garlic has immune-boosting and heart-healthy properties. The healthy fats from the nuts and olive oil in pesto complement the lean chicken, making it a balanced meal.

  6. Cheese in Moderation: While mozzarella adds a creamy, melty finish to the dish, it also provides a good source of calcium and protein. The key here is moderation, as a little cheese goes a long way in terms of flavor.

How to Make Pesto Sheet Pan Chicken

Step 1: Prep Your Ingredients: Start by slicing your chicken breasts into bite-sized pieces. Trim and cut the green beans in half, and halve the cherry tomatoes. You can also prep the pesto if you’re making it homemade or just grab a jar from the store.

Step 2: Combine and Freeze:  In a large bowl, mix the sliced chicken, green beans, halved tomatoes, pesto, minced garlic, salt, and olive oil. Toss everything together until the chicken and vegetables are well coated, and transfer the mixture into a freezer-safe bag or container.

Step 3: Bake the Meal: Thaw your meal in the fridge the night before you plan to cook it. When you’re ready to cook, preheat the oven to 375°F. Spread the mixture evenly across a large sheet pan, ensuring the chicken and veggies are spread out so they cook evenly. Roast in the oven for about 15 minutes, or until the chicken is cooked through and the vegetables are tender.

Step 4: Add the Mozzarella: Once everything is cooked, sprinkle the shredded mozzarella cheese over the chicken and vegetables, then return the pan to the oven and broil for 2 minutes or until the cheese is melted and bubbly.

Step 5: Serve and Enjoy: Once the mozzarella is golden and melted, take the sheet pan out of the oven. Serve the pesto sheet pan chicken as is, or with a side of brown rice, quinoa or salad.

Pesto sheet pan chicken is more than just an easy, weeknight dinner—it’s a flavorful, healthy, and freezer-friendly meal that will simplify your life in the kitchen.
