Chicken and Poblano Fajita Bowls: Minimal Prep, Maximum Flavor

If you’ve ever stood in front of the fridge wondering what to make for dinner again, this one’s for you. This chicken and poblano recipe makes one of my favorite freezer meals because it’s flavorful, satisfying, and secretly super healthy. You just toss everything into a bag and freeze! When you’re ready, thaw it overnight in the fridge and bake it in the oven. Add a squeeze of fresh lime and a sprinkle of cilantro, and you’ve got dinner done without breaking a sweat.
Chicken and Poblano Fajita Bowls are high in protein (hello 50g per serving!), low in calories, and seasoned with smoky spices. It’s everything you love about fajitas—just simplified for real life.
What Makes This Chicken and Poblano Recipe a Healthy Choice?
When I’m doing meal prep for the week (or stocking the freezer before a busy season), I always try to include a few protein-heavy, veggie-packed meals that I know my whole family will eat. This recipe doesn’t rely on heavy sauces or pre-made seasoning packets. You’re in control of everything going into the bowl, so no excess sodium or mystery ingredients. This recipe has:
-
Lots of protein
Protein is one of the key nutrients for blood sugar balance and satiety. With a whopping 50 grams per serving, this bowl will keep you full without feeling heavy. If you’re looking to incorporate more protein into your diet, you should check out our blog post The Best High-Protein Freezer Meals – Healthy and Filling Recipes. -
Just 321 calories per serving
At just 321 calories per serving, this is a light but super satisfying meal. -
Controlled sodium
Most store-bought fajita kits and seasoning blends are packed with sodium. This recipe lets you control the salt from the start, and 1½ teaspoons across multiple servings keeps it flavorful without being excessive. -
Anti-inflammatory ingredients
You’ve got extra virgin olive oil (a heart-healthy fat), garlic, cumin, paprika, and chili powder—all of which support gut health and reduce inflammation. Plus, poblano peppers are rich in vitamin C and antioxidants. -
Clean ingredients only
No sugar-laden sauces, no refined oils, and no preservatives. Just whole, real food.
What Ingredients Do I Need For Chicken and Poblano Fajita Bowls?
Here is everything you’ll need for this freezer meal:
-
2½ lbs boneless skinless chicken breasts, cut into strips
-
1 yellow onion, sliced
-
2 poblano peppers, sliced
-
2T extra virgin olive oil
-
1T chili powder
-
2t smoked paprika
-
2t garlic powder
-
1t ground cumin
-
1½ t salt
-
Juice of 2 limes (added on the day of cooking)

What Are Poblano Peppers?
If you’ve never cooked with poblanos before, you’re in for a treat. Poblanos are a type of mild chili pepper that originated in Mexico. They’re dark green, kind of heart-shaped, and about the size of a bell pepper, but with a bolder flavor. Poblanos have a subtle smokiness and just the tiniest bit of heat (think: less spicy than a jalapeño). When you cook them, especially roasted or sautéed, they become soft and earthy with a rich, slightly sweet depth. They’re often used in dishes like chile rellenos, enchiladas, and mole sauces, but they also work beautifully in a bowl like this, where they can shine alongside onions and spices.
You can usually find fresh poblanos in the produce section near the bell peppers. Just look for firm, shiny skin and no soft spots.
Freezing Tips and Tricks:
-
Label everything. Include the name, date, and cooking instructions on the bag so you’re not left guessing later.
-
Freeze flat. Lay the bag down flat in the freezer so it takes up less space and thaws faster.
-
Double it. This recipe freezes really well, so I almost always make a double batch—one for this week, and one for later.
-
Leave the lime and cilantro out until cooking day. Fresh ingredients like citrus juice and herbs lose their punch in the freezer, so add them after cooking for the best flavor.
Cooking Instructions
-
Thaw overnight in the fridge.
-
Preheat oven to 425°F.
-
Transfer the thawed chicken and veggies to a parchment-lined baking sheet.
-
Bake for 20–25 minutes, or until the chicken is cooked through and the vegetables are tender.
-
Toss the cooked chicken and veggies with fresh lime juice and chopped cilantro (if using).
-
Serve with your favorite toppings and sides!
What Can I Serve with This Recipe?
One of the best things about this recipe is how customizable it is. Here are some of my favorite sides and toppings to turn this into a full-on meal:
-
Fresh cilantro:
Sprinkle it on top just before serving to add a bright, herby note that balances out the smoky flavors. -
Rice:
Keep things simple with a scoop of your favorite type of rice. Cauliflower rice is also great if you want to keep the carbs low. -
Black beans or pinto beans:
A spoonful of beans adds plant-based fiber and makes the meal extra filling. -
Avocado or guacamole:
A few slices of avocado or a dollop of guacamole gives this meal a creamy, cooling contrast to the smoky peppers. -
Roasted sweet potatoes:
Try serving it over roasted sweet potatoes for a nutrient-rich option that also offers a hint of sweetness. -
Corn tortillas or grain-free tortillas:
You can always turn this into tacos or fajitas if you’re craving something handheld. -
Quick slaw or pickled onions:
A crunchy, acidic topping like slaw or pickled onions helps cut through the richness and adds a fresh element. -
Shredded cheese:
Cheddar, Monterey Jack, or a Mexican blend are all great options. -
Sour cream:
This adds a nice cooling element, which is especially great if you’re serving the bowls with something spicy on the side.
