I’m always on the hunt for freezer meals that check all the boxes: flavorful, filling, healthy, and ideally something you can prep ahead of time. Enter: Paleo Buffalo Chicken Stuffed Sweet Potatoes—a spicy, savory, satisfying combo that’s become a regular in my weeknight dinner rotation.

What Are Paleo Buffalo Chicken Stuffed Sweet Potatoes?

Think of this as if game-day wings and your favorite baked potato had a health-conscious baby. The base is a soft, naturally sweet roasted sweet potato, stuffed with juicy shredded chicken tossed in ranch, buffalo sauce, and spices. It’s a full meal in a single spud!

Why I Love This Freezer Meal Recipe

There’s something about the balance of flavors here that really works. The sweetness of the potato calms down the heat of the buffalo sauce, and the richness of Ranch dressing pulls it all together. It tastes indulgent but it’s dairy-free, gluten-free and grain-free, making it a totally clean recipe. The variety of toppings you can includes also makes this meal endlessly customizable.

What Makes a Meal Paleo?

A meal is considered paleo if it aligns with the principles of the Paleolithic diet, which is based on the idea of eating like our pre-agricultural hunter-gatherer ancestors. In general, paleo meals focus on whole, unprocessed foods and exclude anything that came with farming or modern food processing. Paleo-approved foods include:

  • Meat, poultry, and fish (preferably grass-fed or wild-caught)

  • Eggs

  • Vegetables

  • Fruits

  • Nuts and seeds

  • Healthy fats (like olive oil, coconut oil, and avocado oil)

  • Herbs and spices

This recipe for buffalo chicken stuffed sweet potatoes qualifies as paleo because:

  • It uses whole foods (chicken, sweet potatoes, spices)

  • Avoids dairy, grains, and processed ingredients

  • Uses paleo-compliant sauces and dressings (with clean ingredients)

Are Sweet Potatoes Paleo?

Sweet potatoes are considered paleo because they’re a whole, unprocessed root vegetable, which fits right into the paleo framework. Unlike white potatoes (which are a bit more debated in strict paleo circles), sweet potatoes are generally accepted because they’re nutrient-dense, high in fiber, and packed with vitamins like A and C.

Why This Recipe is so Good for You

Sweet potatoes are loaded with fiber, beta-carotene (which converts to vitamin A), and complex carbs that keep you full longer. The shredded chicken brings in lean protein, which helps with muscle recovery and satiety. By using a paleo-friendly buffalo sauce and skipping dairy, you’re keeping inflammation low while still packing in big flavor. Plus, you’re getting a full serving of veggies, protein, and healthy fats all in one delicious, freezer-friendly meal.

Recipe Tips

Here are a few quick tips to make sure your stuffed sweet potatoes come out perfect every time:

  • Choose the right size potatoes: Medium to small sweet potatoes work best because they cook more evenly and make for manageable single servings.

  • Roast ahead of time: If you’re meal prepping, you can bake the sweet potatoes ahead of time and store them in the fridge for up to 4 days. Just reheat and top with the buffalo chicken when you’re ready to eat.

  • Use a meat thermometer: If you’re unsure whether your chicken is cooked through, aim for an internal temp of 165°F. This helps keep the meat juicy and safe to eat.

  • Double the batch: Consider making a double portion to freeze!
